Quiches are stupidly quick and easy to throw together for a super tasty snack. Nothing has to be exact and the pastry can just be the quick store bought type. Alternativily, leave out the pastry altogether and make it in a cast iron, non-stick frying pan!
Ingredients
- Pie Crust: 1 (store-bought or homemade)
- Bacon: 6-8 slices, cooked and crumbled
- Eggs: 3-4 Cornish
- Heavy Cream: 1 to 1 1/4 cups
- Gruyère Cheese: 1 cup, grated
- Onion (optional): 1, finely chopped
- Salt, pepper, and nutmeg: To taste
Instructions
- Prepare the Crust: Preheat oven to 375°F (190°C). Roll out the pie crust and place it into a tart or pie pan. Blind bake the crust for 10-15 minutes until just starting to brown. Allow to cool.
- Cook the Bacon: While the crust bakes, cook the bacon until crispy, then crumble it into small pieces.
- Prepare the Filling: In a large bowl, whisk together eggs, heavy cream, and seasonings. Stir in the grated cheese and crumbled bacon.
- Assemble the Quiche: Pour the egg mixture into the cooled pie crust. Spread evenly with a spatula.
- Bake: Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown. Let it cool slightly before serving.
